The Perfect Green Dip for St. Patrick's Day

It’s not easy being GREEN. Unless you’re this bright green dip packed with all the fresh flavours of spring! It’s super easy to make and it’s easy to love. It’s perfect for St. Patrick’s Day and is sure to become your family’s new favourite! 

As usual, this recipe is more of a guideline and a suggestion than something rigid you need to follow. How can you change it up? Use different beans? Herbs? Tweak the seasoning? Whatever you do, be sure to add lots of fresh GREEN things to make the colour and flavour jump out! Snap a photo of your version and share it with us.

Giving kids a small bowl or cup (or hollowed out half green pepper 😊), an assortment of veggies and crackers and a scoop of dip is a surefire way to get them excited about exploring and tasting different foods. A fresh asparagus spear can become a “paintbrush” on a plate - let the exploration unfold.

Ingredients

  • 1 can of white kidney beans or chickpeas (or 2 cups cooked), drained and rinsed

  • half a lemon

  • one clove of garlic (or more or less - suit your taste!)

  • a fistful of fresh parsley, washed and dried

  • a generous glug (about 1/4 cup) of olive oil

  • salt and hot sauce to taste

Directions

  • Squeeze the juice from the lemon and add it to a blender or food processor.

  • Add in the garlic, olive oil, parsley and a generous pinch of salt and dash of hot sauce and process until everything is mixed together to become a smooth, green puree.

  • Toss in the drained beans and whir everything together until it reaches a consistency you like. Add a bit more olive oil or water to thin it out if necessary.

  • Taste it and add a bit more salt, hot sauce or lemon juice if you think it needs it. Get your kids to be official “taste testers” and weigh in!

  • Serve with an assortment of veggies or other dipping foods and enjoy!
